The meat is highly prized for this excellent marbling that delivers outstanding results whether seared, grilled, or cooked sous-vide. The high level of intramuscular fat contributes to its deep flavour and succulence and the fat caramelises when cooked at high temperatures, creating a delicious crispy finish, whilst keeping the centre tender.

Manchego Basque-Style Cheesecake:
