Norma opened in Fitzrovia in September 2019, and has since become the go-to destination for contemporary, vibrant Sicilian-inspired cuisine in London. To celebrate their fourth birthday, the restaurant will host four guest chef dinners across four consecutive evenings from 26 to 29 September.
Giovann Attard, Executive Head Chef of Norma, has collaborated with Lisa Goodwin-Allen and Jozef Rogulski, Giuseppe Federici, Danilo Cortellini and Olivia Cavalli to create four different menus that showcase the individual cooking styles of the guest chefs whilst also taking inspiration from Norma’s Sicilian menu and style. Each guest chef dinner will offer a different five-course set menu, priced at £65pp, and running as follows:

Friday 29 September
Lisa Goodwin-Allen and Jozef Rogulski will start the proceedings on Tuesday 26 September. Lisa is Executive Chef of Michelin-starred Northcote in Lancashire and collaborates with The Stafford’s Executive Chef, Jozef Roguski on The Game Bird and The American Bar’s menu direction. Northcote, The Stafford and Norma are all part of The Stafford Collection, so with Lisa and Jozef working alongside Giovann, this dinner sees The Stafford Collection’s three brilliant chefs cooking together to create a refined Sicilian feast, with menu highlights including Octopus carpaccio and Leek and truffle agnolotti.
The following evening, Giuseppe Federici will be leading the menu as he continues his culinary crusade to inspire people with plant-based Italian recipes. With vegan comfort food at the forefront of the menu, his viral sensation of a recipe – Nonna’s ultimate vegan lasagne – will feature, as well as such delights as Vegan Biscoff Tiramisu.
For Thursday 28 September, Michelin-trained chef and pasta supremo Danilo Cortellini has developed a menu that encapsulates classic Italian flavours, including an irresistible pasta course: Uovo in raviolo San Domenico with seasonal truffle.
For the Friday finale on 29 September, food writer, stylist, chef, and cookbook author Olivia Cavalli has developed a menu inspired by the seasonal change of summer turning to autumn. With dishes taken from Olivia’s latest cookbook Stagioni: Contemporary Italian Cooking to Celebrate the Seasons (Pavilion Books, October 2022), the five-course set menu focuses on seasonal Italian dishes including Saffron risotto with braised fennel and Roasted Delica pumpkin, borlotti beans, purple kale and salsa verde. The following evening, Giuseppe Federiciculinary crusade to inspire people with plant-based Italian recipes.
