This Halloween there will be no tricks, only treats. The summer season is officially behind us, which means we can finally look forward to oversized jumpers, pumpkin spiced lattes, and, of course, Halloween!
You’re not alone in feeling such joy for the impending spooky season. In the United Kingdom, Halloween has become one of the biggest cultural and commercial events, with many looking forward to celebrating with boo-tiful outfits and spook-tacular food.
To help make your event a successful one, we’ve put together some of our favourite Halloween-inspired vegan recipes. Whether you’re throwing a huge fancy dress party or keeping things low-key with a horror movie marathon and cosy pyjamas, these snacks will be ideal.
Stuffed pumpkin peppers
Sweet treats always get the spotlight around this time of year, so why not surprise guests and appeal to their savoury side with these delicious stuffed peppers in the shape of carved pumpkins? Totally on trend and fa-boo-lous.
What you choose to stuff the peppers with is completely up to you, however we’ve popped some ideas here for inspiration. The below serves six, so use this as a guideline for your party size.
Ingredients:
6 x bell peppers (any colour is fine, but obviously orange most resembles a pumpkin!)
250g quinoa
200g black beans
150g sweetcorn
100g salsa
1.5 teaspoons of taco seasoning
150g vegan cheese
Step one – carve the peppers
First, we need to make sure that our bell peppers look like little pumpkins, so grab a knife and get carving. The knife should be small and first used to cut off the top of the pepper in a zig zag shape (and then put to one side, as this will be your lid), and then to remove the pith and the seeds. Once that’s ticked off, carefully carve facial features into the outer layer of the pepper.
Feel free to get as creative as you want here, but typically the peppers should have triangles for the eyes and an upside-down triangle for the mouth.
Step two – steam the peppers
Your peppers need to be soft and tender, which is why the next step involves popping them into the oven to be steamed.
Place the peppers on a baking dish (so they’re sitting on their bottoms) and pour one quarter cup of water into the base of the dish. Cover with foil, poke some holes in the top to allow for some breathing space, and then bake for 30 minutes at 200°C.
Step three – create the filling
As your peppers relax and unwind while getting the sauna treatment, you have time to make your filling. As said above, you can experiment here should you wish to.
We would opt for combining the quinoa with water and bring to the boil. While that’s happening, mix the black beans, corn, seasoning, salsa, and vegan cheese. Add the quinoa to the same bowl once that’s cooked.
Step four – stuff the peppers
Once the peppers are nice and steamed and your filling is mixed well, evenly split the mixture across the six peppers. If you’re in an extra cheesy mood, feel free to add some more of your favourite vegan cheese to the top of the peppers. Once each has been sufficiently stuffed, put the zig-zag lids back on top.
Step five – pop the peppers back inside the oven
We’re almost there! To finish off this recipe, put the uncovered peppers back inside the oven for another ten minutes. This baking time will warm the filling and melt the cheese, making them delicious, gooey, and eerie-sistable. Your guests will love them!
Chocolate dirt pots
Vegan, gluten-free, and devilishly tasty. Offer your guests some chocolate dirt pots for a treat they won’t forget! It doesn’t sound very nice, but it is Halloween…so it doesn’t have to! Instead of actual dirt, they’ll enjoy thick, rich mousse topped with crushed chocolate cookies and spooky sweets. The recipe below serves six, so use this as a starting point.
Ingredients
700g silken tofu (don’t forget the silken part!)
200g dark, dairy-free chocolate
160g maple syrup
Vegan chocolate cookies
Wiggly worm sweets
Googly eyes (sugar sweets)
Step one – mix the ingredients
While you have the chocolate melting over medium-low heat, pop the drained silken tofu into a food processor alongside the maple syrup and blitz until smooth (usually one to two minutes).
Step two – add the chocolate
Once the chocolate has fully melted, fold it into the tofu mixture until silky and completely combined. This is the start of something magical!
Step three – pop the mixture into glasses and chill
You can use whatever glasses you have handy; however, we recommend clear glass as this allows for you to see the ‘dirt’ a lot better. Once the mixture has been evenly distributed across your glasses, pop them into the fridge to chill for 15 minutes.
Step four – decorate!
Now comes the fun part. Once the mousse has been set, you can decorate each glass to achieve that ‘dirt’ vibe we’re aiming for. Crumble the cookies on top and add the wiggly worms, eyes, and any other vegan sweets you want! Ta-da, now you have chocolate dirt pots waiting for your guests.
Monster apple bites
This dish looks extra creepy but it’s extra tasty – the ultimate Halloween food combo! Not only will it take just minutes to create these spooky monster apple bites, but you also need only three or four ingredients. That’s a sure winner in our eyes.
Ingredients:
Apples
Peanut butter
Jam
Almonds
Step one – slice your apples
Create thick apple slices by cutting in a straight line down either side of the core, so that you have two wedges, and then cut them both down the middle to make four pieces.
From there, slice each wedge lengthways on the side of the skin. This should create an opening on each portion which will serve as the ‘mouth’.
Step two – spread your topping
Spread your jam or peanut butter on the bottom side of your apple wedge. Please note that most brands of jam and peanut butter are naturally suitable for vegans, however it’s worth double checking the label.
Step three – add the teeth
To give the mouth some teeth, you then need to add some slithered almonds to your apple’s top and bottom row. Remember, we’re not aiming for neat and tidy here! The more gaps and sharp angles, the better.
