SUSHISAMBA LONDON ANNOUNCES EXCLUSIVE PARTNERSHIP WITH ACCLAIMED BRUNO PAILLARD CHAMPAGNE

SUSHISAMBA London is proud to announce an exclusive partnership with acclaimed Bruno Paillard Champagne. SUSHISAMBA will now feature the largest selection of Bruno Paillard in the UK from the Maison de Champagne’s Library Collection, showcasing the restaurant’s dedication to excellence.

Since opening SUSHISAMBA’s first European location in 2012, Shimon Bokovza, restaurant Founder & CEO, sought a Champagne that would complement and bring something special to the SUSHISAMBA brand. He finally found it in the unrivalled quality of Bruno Paillard Champagne. Shimon travelled to France to meet Bruno, where they bonded over their shared love for adventure, art, food and wine. It was on a rainy day on the hills of Reims that Bruno Paillard formed his first partnership with a global brand, SUSHISAMBA. Bruno recalls, “As a boutique Champagne house, we only partner with restaurants who share our passion for excellence and dedication to creating a memorable experience for guests. From the instant I met Shimon, I knew we spoke the same language. We are both pioneers with the utmost respect for origins and originality and the art of dining.”

Shimon shares Bruno’s sentiment, “We’re honoured to be partnering with Bruno Paillard, one of the premier Champagne producers. I had the pleasure of visiting Bruno’s estate to see the inimitable terroir and the unparalleled craftsmanship behind each bottle – a commitment to quality that we uphold at SUSHISAMBA. As two very passionate individuals in the worlds of food and beverage, I see this relationship promising many exciting future endeavours.”

The new partnership brings a phenomenal range of nine Bruno Paillard Champagnes to SUSHISAMBA London’s list, making it the largest in the UK, including:

• 1990 BRUNO PAILLARD BRUT BLANC DE BLANCS LE MESNIL GRAND CRU 1.5l (£755)

Very distinguished nose with scents of cedar and leather, this 1990 has been evolving in magnum, the best format for older Champagne Vintages. It was released from Bruno Paillard’s private cellar for SUSHISAMBA.

1995 BRUNO PAILLARD BRUT BLANC DE BLANCS LE MESNIL GRAND CRU 750ml (£340)

Released from Bruno Paillard’s private cellar for SUSHISAMBA, this unique and rare single cru wine is characterised by a dense gold colour and extremely fine bubbles. Its aroma is both intense – due to long ageing on lies – and delicate – reminiscent of old roses, almonds and cocoa nibs.

• 1996 BRUNO PAILLARD BRUT BLANC DE BLANCS 750ml (£190)

“THE” vintage for this region, this Blanc de Blancs 1996 sets new standards in Champagne. It is made from two different grand crus – Le Mesnil sur Oger and Oger – and is characterised by its deep golden colour, candied citrus aromas in the bouquet and profound chalky, mineral finish.

• 1996 BRUNO PAILLARD BRUT ASSEMBLAGE 750ml (£350)

Composed of 52% Chardonnay and 48% Pinot Noir from the exceptional vintage of 1996, this Champagne expresses aromas of gingerbread followed by tones of toasted brioche and candied fruit.

• 1999 BRUNO PAILLARD BRUT ASSEMBLAGE 750ml (£210)

“Gourmand” and refreshing, the glass shows a gold colour with aromas of ripe fruits dominated by citrus and hints of cherry from the Pinot Noir.

• 1999 BRUNO PAILLARD BRUT N.P.U. NEC PLUS ULTRA 750ml (£352)

“Nec Plus Ultra” stands for only the best vintages from Grand Cru – matured for 12 years in the cellar with lies followed by two years of rest post disgorgement.

In addition, SUSHISAMBA’s wine list includes three other non-vintage Bruno Paillard selections, available both by the bottle and by the glass: Bruno Paillard Brut Première Cuvée £75 (£13.50 glass); Bruno Paillard Brut Blanc de Blancs Reserve Privée Grand Cru £125 (£22.50 glass); and Bruno Paillard Brut Rosé Première Cuvée £108 (£18 glass).
